One Pot Meals

With the warmer days quickly approaching, the last thing you want to do is cook elaborate meals that are going to take time and heat up your home. Throw open your windows, toss a pot onto the stove, and try some one-pot meals that are quick, easy and absolutely delicious!

Lemon Chicken with Rice
Melt 2 tablespoons of butter over medium heat in a large skillet pan. Season 4 chicken breasts with salt and pepper to taste and 1 teaspoon of Italian seasoning. Brown chicken in the butter for 1-2 minutes on each side (do not cook chicken through just yet).

Take out the chicken and add 1 cup of uncooked rice, 2 1/4 cups of chicken broth, the juice of one lemon and 1 more teaspoon of Italian seasoning to the pan. Place the chicken on top, cover and simmer over medium-low heat for 20-25 minutes until the liquid is dissolved.

Garnish with lemon slices and fresh parsley. So easy!

Ranch Pork Chops and Vegetables
Preheat oven to 400F degrees and lightly coat a baking sheet with oil. Place 4 (8oz) pork chops, 16oz baby red potatoes (halved) and 16oz green beans (trimmed) in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with 1 (1oz) package of dry Ranch seasoning then season with salt and pepper to taste.

Roast in oven until pork is completely cooked through, for about 20-22 minutes, until it reached an internal temperature of 140コF. Broil for 2-3 minutes to caramelize and brown the pork.

Garnish with fresh parsley. Done? Done!

One Pot Cod with Tomatoes
Preheat oven to 400F degrees. Heat a large, oven-proof skillet over medium heat, add olive oil and swirl to coat. Add 1 1/2 cups of chopped onion and saute for about 5 minutes or until the onions are tender. Stir in 3 cups of chopped tomatoes, 1/4 cup of dry white wine, 1 teaspoon of oregano, 1 tsp of red wine vinegar, salt and pepper and crushed red pepper. Bring to a simmer and cook for 3 minutes, stirring occasionally.

Sprinkle 4 (6oz) fillets of cod with salt and nestle the fish into the tomato mixture. Bake for 18 minutes or until the fish flakes easily when tested with a fork. Sprinkle with oregano, parsley and 1/2 cup of feta cheese.

This recipe may seem more involved, but the flavor is worth the extra effort!
